I was in the mood for something sweet the other day, and when I dug deeper into that craving, I realized I wanted cookies! I scoured my kitchen for ingredients I could throw together to make some healthy cookies.
I combined all that together with a little baking soda and voila, Almond Butter Cookies!
This was one of the easiest cookie recipes I’ve made probably ever. The only ingredients are almond butter (which is pure almonds), egg, baking soda, sugar substitute, and the tiniest bit of salt. That’s it! They came out nice and soft and are so low carb even Dr. Atkins would be proud. You could even try making these goodies vegan by using a flax egg instead of a real egg, though I can’t vouch for the results.
These cookies come out of the oven really fluffy and airy (see above). I suggest letting them cool completely before eating so they set and are a little crisper on the outside, like below:
