When my boyfriend and I go out to eat, I can almost always guess what he’s going to order. It’s not that he is a picky eater or doesn’t like to try new things, but he knows what he likes when it comes to food and tends to stick to that.
One of his many usuals is a buffalo chicken sandwich, so when I came across a recipe for buffalo chicken bites, I had to make it for him. For those of you who follow this blog regularly, you know that I don’t eat meat – so what’s a girl cooking for one meat eater and one non-meat eater to do? Switch out the chicken for cauliflower! Meat for him, veggies for me, spicy-ness for everyone!
The recipe for the buffalo cauliflower bites is below. If you’d like to make buffalo chicken bites, just sub out the cauliflower for 2 large boneless, skinless chicken breasts and cut them into bite-sized pieces.
I paired these amazingly hot bites with some equally amazing twice-baked spuds. I only microwaved them for 10 minutes, and they were slightly undercooked. I added a couple more minutes in the recipe below to compensate for the undoneness. You can also use any cheese you like. I had Cabot Fancy Blend on hand (it’s lactose free!), but plain cheddar would be delish, as well.
I threw these in the oven with the cauliflower/chicken bites (for the last few minutes they were cooking) to spare myself a little time. Five whole minutes to be exact. Efficiency. These are the potatoes pre 2nd bake.
If you want to balance out the heat of the bites, try topping them with a dollop of Tofutti Sour Cream. It just so happens, sour cream also goes very well with potatoes.
