Tomorrow’s Elf for Health challenge is to have a salad for lunch and make your own dressing. I almost always pack a salad for lunch, but this challenge has given me the perfect excuse to try something new.
A lot of the dressings I’ve made in the past have been oil based. Creamy ones tend to use mayonnaise, which is too high in fat and calories. Soooo instead of mayo, I opted for my favorite magic mayo. Only 10 calories per tablespoon!
In addition to wanting a creamy dressing, I also wanted something with some kick. Hello, Sriracha! This dressing definitely has a hot streak. Be warned if your taste buds are sensitive. I think this would also be delicious on a sandwich or mixed into tuna or egg salad!
I plan on pairing this with one of my favorite salads: mixed greens, hearts of palm, tomatoes, avocado, hearts of palm, and sunflower seeds. One of the best parts about it? No blender or overnight chilling required! Just a bowl and a fork to whisk everything together. Super easy and ready to go as soon as you’re done.
