So as my Valentine’s Day treat to all my healthy-living friends, I bring you these love-filled Easy 3-Ingredient Chocolate Truffles.
That’s right, my friends – 3 ingredients! These are the easiest dessert you’ll ever make, and one of the tastiest! All you do is combine the ingredients, pour into a mold, freeze for a few minutes and voila! Valentine’s Day goodness at the ready!
I used my beloved Nektar Honey Crystals to give these babies the perfect amount of sweetness. No muss no fuss! Technically, these sweet little crystals contain cane sugar, so they aren’t Paleo (though they can be made both paleo and vegan quite easily). Fortunately for me, my Paleo experiment ends before Valentine’s Day – so these babies are currently sitting in my freezer waiting to be devoured. Will power to the extreme.
Paleo or not, these truffles are still quite healthy! They’re made with simple, whole ingredients and are dairy, gluten, and soy free! Each truffle is only 44 calories, has 4.8 grams of healthy fat (thanks to some delicious Vita Coco Coconut Oil), less than 1 carb and a minuscule amount of sugar (only 0.2 grams). They make the perfect healthy Valentine’s Day treat!

- 1/4 cup coconut oil, melted (I used Vita Coco)
- 2 Tbsp unsweetened cocoa powder
- 1 tsp Nektar Naturals Honey Crystals*
- Combine all ingredients in a bowl and whisk until thoroughly combined and lump free.
- Pour into candy mold.
- Freeze for 5 minutes or until set.
- Enjoy immediately or keep stored in freezer.
- *To make vegan or paleo, sub honey crystals for pure maple syrup or sweetener of choice.
