One night, I was in the mood for some stir-fry. Usually, I’d just toss together any random veggies sitting in the fridge/freezer with some soy sauce and call it a day, but this time, I wanted to be a little more adventurous. That’s where this Eggplantastic Tofu Stir-Fry came into play.
The recipe is based off of this one from Laa Loosh, but I made some tweaks to the ingredients and portions. Now it’s a quick & easy, taste-bud pleasing, stir-fry for one (but can easy be doubled, tripled, quadrupled, octamom-ed up!)
