The Elf for Health holiday challenge ended over the weekend. It’s so hard to stay healthy during the holiday season, but each little challenge helped me keep up a healthy lifestyle throughout the most wonderful (and crazy) time of the year. Here’s a roundup of some of my favorite challenges:
Top left: The very first challenge was to go meatless. This wasn’t very difficult for me as I don’t eat meat on a daily basis, but it was still fun! I had pumpkin baked oatmeal for breakfast, a big salad for lunch, and tofu pad thai for dinner. Get the full recap and the pad thai recipe here.
Top right: Send a card or a handwritten note. This is part of one I sent to all my fellow elves.
Middle right: Make your own dressing. Click for the recipe for this creamy sriracha dressing.
Bottom left: Pack a healthy snack and bring one for a friend. I made these amazing granola bars.
Bottom right: Bake healthy cookies. This was my favorite challenge! I made these secret ingredient healthy brownies.

I had such a blast participating in the 6-week challenge and sharing encouraging words with my each of my elves. It feels strange not to face the day with a specific challenge, but the community is still going strong on Facebook and Twitter. Everyone is still supporting each other, and that is something I truly love about the online health and fitness community. Don’t stop challenging yourself!
