Happy Saturday, my fit and focused friends! I rarely post over the weekend, but after being away from blogging last week, I had the itch to get back into it. Thank you all again for your kind words about my grandmother and the words of wisdom for how to get my blogging groove back. I definitely agree with you all that all I needed was a little time, and now it feels good to be back. 🙂
Although I took a mini break from blogging, I still kept up with the Move Nourish Believe Challenge sponsored by Lorna Jane Active and Sweat Pink. I just completed week 2 of the 3-week long challenge aimed at helping all of us stick to our healthy living goals. It’s been awesome to have a little challenge every day and to see all the pictures from every one else participating in making February healthier than ever!
While week 1’s challenges were all about moving our bodies, week 2 challenged us all to nourish our bodies. I love cooking/food challenges, so this was right up my alley. Check out this week’s challenges:
Day 1: Go Meatless – This wasn’t too difficult for me as I tend to go meatless most days, but I changed up my salad a bit by adding in some SunShine Burgers (more on those to come!) I call this one the Happy Piggy Salad: kale, tomatoes, chickpeas, pumpkin seeds, avocado, and half of a Garden Herb SunShine Burger.
Day 2: Take Your Lunch To Work – This is another one I usually do, so instead, I brought my breakfast to work, too! This homemade buckwheat cereal really hit the spot. Check back in on Monday for the recipe!
Day 3: Write It Down – I’m not a huge fan of food journaling or calorie counting, so this was a bit of a challenge. I did enjoy sharing my WIAW, though! I had that homemade buckwheat cereal for breakfast, a big kale salad for lunch, a smoothie for a snack (which was actually more like a slushy because I froze it in order to bring to work), and then this raw soup and tofu crumble shiitake mushroom salad for dinner!
Day 4: Smoothie Day – I sure do love my smoothies! For this challenge, I made an avocado, blueberry, and peanut butter smoothie. Yum, yum, yum!
Day 5: Go Raw Friday! – This was fun! I actually did two recipes for this challenge. I made this amazing raw tomato, mushroom, avocado, and corn soup from This Rawsome Vegan Life. And then my boyfriend and I made sushi for Valentine’s Day dinner! Looks pretty legit if I do say so.
