Today’s Elf for Health Challenge was to eat at least 3 food groups with every meal. This wasn’t as tricky as I thought it would be. Check out the eats:
For breakfast, I had a bowl of Kashi GOLEAN Crunch with a tablespoon of flax seeds (grains + GOLEAN Crunch should count as protein!), almond milk (dairy – well a sub, but my kind of dairy), and some raisins. I usually have some sliced banana on top, but my banana had turned the black variety. Bleh.
Lunch was a Chipotle Tofu salad (recipe for the tofu below) with this amazing non-dairy ranch dressing. This salad was packed with goodness.
Veggies: kale, red cabbage, mushrooms
Fruit: avocado, tomatoes (I know they seem like veggies, but they’re not!)
Protein: tofu and cashews from the dressing
Dinner was a citrus-marinated tofu with onions and peppers from Serious Eats with a side of brown rice. The tofu was deliciously tangy, and all together, this meal gave me grains, protein, and veggies. If you’re ever in need of a good side, you can never go wrong with roasted peppers and onions. Just toss them with some olive oil, salt and pepper and throw them in the oven at 400 degrees for about 20 minutes. Yum! Here’s a closer look:
