I love all three of PlantFusions products for different reasons, but when it comes to making these Gingerbread Protein Bites, I used the classic PlantFusion Complete Vanilla Bean. Just toss it into a food processor or blender with the rest of the ingredients, and you’ll have some healthy holiday delight in minutes!
- 1/2 cup unsalted cashews
- 1 cup unsalted walnuts
- 1/2 cup old fashioned oats
- 1 scoop vanilla protein powder (I used PlantFusion Complete Vanilla Bean)
- 10 pitted dates
- 1/2 tsp pumpkin pie spice
- 1 tsp ground ginger
- 1 Tbsp molasses
- Place all ingredients in a food processor and process until the ingredients begin to stick together.
- Gently roll into bite-sized balls (makes about 15-20 balls).
- Refrigerate and eat as you wish!
