I remember way back in the day going to Dairy Queen with my Dad. He would always get a vanilla cone dipped in a hard chocolate shell. He was also a Klondike fan, and I quickly became one, too. I would savor the little ice cream sandwich, and had a method for making it last as long as I could. I’d bite off the edges, leaving hard chocolate on the top and bottom, and then I’d lick away at the ice cream center until I was left with the shell, which I would then devour.
Once in a while, when we’d make ice cream sundaes at home, we always had the Magic Shell to coat our ice cream concoctions. Ice cream just wasn’t complete with out it.
Fast forward a few years. Not only can I no longer have ice cream, but I also can’t have the milk and soy in the delectable Magic Shell. What’s an allergy-laden food blogger to do? Create her own healthier version, of course! My friends, say hello to my Healthy Homemade Chocolate Magic Shell!
This recipe could not be simpler as it only has 3 ingredients and requires all of a minute to make. All you need is melted coconut oil, cocoa powder and a sweetener of your choice. That’s it! And you won’t have to deal with that annoying thing when all the sauce gets stuck in the bottle and no matter how hard you pound on the bottom it just won’t. Come. Out! Bah that’s a pain.
In the past, the only thing that makes this recipe somewhat of a pain is that you have to melt the coconut oil, but luckily, I have a solve for that! NOW Foods makes an awesome product called Liquid Coconut Cooking Oil which is specially processed to remain free-flowing at room temperature. This means no more waiting for solid coconut oil to melt! It also has a higher concentration of MCT fatty acids and contains no trans-fats, artificial ingredients or additives. Life. Easier. Bazinga.
Just mix the liquid coconut oil together in a little bowl with your cocoa powder and sweetener, pour it over your ice cream and watch it solidify into a hard chocolate shell right before your eyes. Just like magic!
Ready for the magical recipe? I know you are!
- 1 Tbsp Liquid Coconut Cooking Oil
- 1 1/2-2 Tbsp unsweetened cocoa powder (depending on just how chocolatey you want it)
- Sweetener of choice (I like a little stevia or maple syrup)
- Mix all ingredients together in a small bowl.
- Pour over your ice cream or nice cream.
- Watch it solidify in seconds and enjoy!
What’s your favorite ice cream topping?
