I was on a quest. A quest to create a healthy version of one of my favorite childhood treats: poptarts! It seemed impossible. I mean, the word “poptart” itself means unhealthy. Ok, that’s not the definition according to Merriam Webster. Actually, poptarts aren’t even in Merriam Webster. But they should be! Because those things are AMAZE!

So how does one make a healthy poptart? Good question. I had no idea where to begin. I looked around my kitchen. I dug through the pantry and emptied the cabinets. Then, I spotted them: Quest Bars! What better way to complete my quest than to use Quest Bars?!

I recently did a full review of Quest Bars here, but some of the main reasons I love these bars is that they taste delicious, have a high protein content, and you can bake with them! (Oh yea, and you can win some as part of the Blogiversary Bonanza Giveaway!)
The dilemma then became not how to make the poptart, but what flavor to make! Lemon Creme Pie? Chocolate Chip Cookie Dough? Vanilla Almond Crunch? Ho hum. Hum ho. I pondered over the bars for quite some time before deciding on Strawberry Cheesecake! Who doesn’t love a good strawberry poptart, after all?
These poptarts have only two ingredients! UNO! TWO! Yippee! Add less than 10 minutes of baking time and what do you get? A soft, chewy outside with a gooey, delicious inside. Mmmmm. Get in my belly!
Plus, this recipe makes a single serving so you don’t have to be worried about being tempted by a whole box. They’re so protein rich (20 grams to be exact), you won’t need more than one, but hey – a gal can never be too safe. They are scrumptious, after all!

Have you ever created a healthy version of a childhood favorite?


- 1 Strawberry Cheesecake Quest Bar
- 1 Tbsp strawberry preserves
- Roll out the Quest Bar and cut in half.
- Place strawberry preserves in the center of one of the halves.
- Place the other half on top and pinch the edges closed with a fork.
- Broil in the oven for 5 minutes (I placed my poptart on a silicone baking mat for easy removal).
- Take a bite and be transported back to your childhood.

I actually love pop tarts (the real things), but only eat them before races or long runs. I never thought of doing this with a quest bar, but I do like quest bars just out of the package. They’re tasty!

You should try baking with them! They get nice and gooey when you heat them up for even just a few seconds in the microwave. mmmm

Whoa, healthy pop tarts? I used to eat a pack every day of freshman gear pre soccer practice! Yikes! Might have to test these out.

I haven’t had a pop tart in a REALLY long time but I used to love them. Brown sugar was my favorite. This looks yummy. I may after to try it out!
