One-pan meals are always the best. They’re even better when you get the main dish and the side dish all together! That’s exactly what I got with this Lemon Baked Tofu dish.
You get lemon baked tofu steaks, delish lemon-marinated green beans, and wonderful baked red potatoes. It’s a snap to whip up, and everything goes together in one dish.
Start by marinating the green beans. Layer them in the dish with the potatoes.
Marinate the tofu, season, and place on top of the veggies.
Pop it in the oven this is what you get!
This was a great, light-tasting dish, but the protein-packed-tofu and the potatoes will fill you right up. It was great on a cold winter night, but I imagine this would make a great spring-time dish, as well.
For non-vegetarians, the tofu can easily be subbed for chicken breast.
