I had another recipe planned for today, but it required the oven. Considering our air conditioning is still out (we got a quote and are now waiting for our warranty company to approve it and order parts), I decided something no bake was the way to go.
I looked through what we had in the house to get some ideas when I spotted a few lemons I had leftover from last week’s dinner. Hmmmm lemons are refreshing. I want something no bake. I haven’t made a new energy ball recipe in a while. How about some sort of lemon flavored energy ball? What else could I add to it? Hmmmm. Oh look, I just got a bag of unsweetened shredded coconut from Now Foods. Lemon coconut energy bites? Done and done!
With the decision made, I got to work turning my idea for these lemon coconut energy bites into a reality.
Then I spotted some vanilla pea protein (also from Now because they make everything amazing) and thought a little protein and a hint of vanilla would give these lemon coconut energy bites an extra little somethin’ somethin’. Protein plus vanilla flavoring? Why the heck not?
Of course, you can’t have lemon coconut energy bites without lemon, so in went a little fresh lemon juice and zest. After a some trial and error with ingredient amounts, the bites came out with zesty perfection.
Like all my energy bite recipes, these couldn’t be easier to make. You simply toss everything into your food processor. Process it up, roll them into balls and TADA: bite time!
I rolled about half of the bites in a little extra coconut and lemon zest and left the rest plain. Both options are scrumptious and make for a great mid-morning or afternoon snack. The combination of protein and healthy fats means these bites will keep you full until your next meal.
- 1/2 c raw cashews
- 2 Tbsp raw, shelled sunflower seeds
- 1/4 c raisins
- 1 Tbsp unsweetened shredded coconut, divided
- 1/2 c vanilla pea protein (or protein of choice)
- 1 c gluten free oats
- 1/2 c honey (agave or brown rice syrup if vegan)
- 1/2 c almond butter
- juice and zest of half a lemon
- zest of 1 lemon
- 1 Tbsp unsweetened shredded coconut
- Place all ingredients in a food processor.
- Process until everything starts to stick together.
- Roll into bites (about 20).
- Place your lemon zest and shredded coconut on a small plate.
- Carefully roll each ball in the zest and coconut mixture.
- Eat immediately or store in the fridge for up to a week.*
*I like to store my bites on parchment paper as they can get sticky. If you stack your bites, I recommend placing a layer of parchment paper between each layer of bites.
