Happy day of love! To spread the love, I thought I’d share a delicious new recipe with you all!
I love Italian food. Which turns out to be pretty unfortunate because 1) Italian food tends to contain a ton of cheese, which doesn’t bode well for my lactose-intolerant self and 2) Italian food can skew toward the unhealthy side of things (tons of carbs, oil, etc).
So I set out to create a healthy version of an Italian staple: Eggplant Parmesan.
I started with a basic chicken parm recipe: chicken, bread crumbs, parmesan cheese, mozzarella cheese, spices, oil, pasta, tomato sauce – and worked away making healthier substitutions.
Obviously, I’m making eggplant parm, so I replaced the chicken with eggplant. Then, instead of breadcrumbs, I took corn flakes and crumbled them up to an almost powder.
I couldn’t find the lactose-free parmesan cheese that I used to get at the little grocery by my old apartment, but I did find Kraft Italian Blend Shredded Cheese. It has 0 grams of lactose! YES! So instead of adding parmesan crumbles to the breadcrumb mix, I added some shredded Italian cheeses to corn flake crumbs.
I used the remaining Italian Blend cheese as the cheesy topping instead of pure mozzarella, so there still isn’t any lactose. AND there isn’t any oil in the entire recipe! Boom!
I had one failed substitution attempt. Well, I wouldn’t really say it failed, it just wasn’t as good as I hoped (ok, maybe it failed). I wanted to make zucchini pasta instead of flour pasta, so I used a mandolin slicer to get really thin slices of zucchini. Only, the thin slices I hoped would curl into noodle form ended up being more like, well, what they were: shredded zucchini. Maybe if I had one of these handy dandy veggie pasta-making gadgets, it would have worked, but alas. Instead, I made zucchini chips with some garlic, basil, and nutritional yeast (to give it a cheesy flavor). Those were much more successful, and made a nice side to my now much healthier, lactose-free eggplant “parm”. Dig in!
