I’m usually crunched for time in the morning, so I like my breakfast to be quick and easy. Usually, I’ll whip up some fast scrambled eggs, but with a new year upon us, I wanted to step outside my box and find other quick, healthy options.
I thought about overnight oats, but as I was looking in my pantry for flavor ideas, I spotted a box of chocolate chip cookie mix. Oooooo cookies!
FOCUS, Nicole. You’re trying to plan a breakfast. Ok, ok. Sugary chocolate chip cookies are out, but I can make healthier, more savory cookies that I won’t feel guilty about eating for breakfast.
Gluten free breakfast cookies. YEP. We’re doing it.
Then I spied my Maple Better Stevia from Now Foods. I’ve been wanting to try that! What would mix well with maple?
I dug through my snack shelf and BOOM: pecans.
With my inspiration nailed, I got to pulling together some other ingredients. Oats, eggs, a little oil, a banana – all things that make for a good breakfast.
I mixed up some batter, plopped the dough on a cookie sheet and a few minutes later my house smelled SO DELICIOUS!
The final result was perfection. They’re the perfect mix of sweet and savory. They’re filling. They’re healthy, and the Maple Better Stevia gave these the perfect sugar-free punch of flavor. That stuff is pure magic.
Now I have a whole batch of these gluten free breakfast cookies ready to enjoy with a cup of coffee as I dive in to my morning emails. Mornings just got so much better (and tastier!).

Ingredients
- 1 1/2 c rolled oats
- 2/3 c almond flour
- 1/4 c raisins
- 1/4 c chopped pecans
- 2 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 very ripe bananas, mashed
- 4 eggs
- 1/2 c melted coconut oil
- 1/2 tsp Now Foods Maple Better Stevia
Instructions
- Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
- While the oven preheats, combine all dry ingredients in a large bowl (oats through salt) and mix well.
- Mix all wet ingredients together in a small bowl (bananas through stevia).
- Add the wet to the dry and mix until well combined.
- Place golf-ball sized portions of dough an inch apart on the cookie sheets. Gently flatten. (Makes about 15 cookies.)
- Cook on the middle rack for about 16 minutes (or until the bottoms get a golden brown).

I would try applesauce! If it came out too liquidy, a flax egg might do the trick.
