Yesterday the first day of the Elf for Health Challenge! This week is packed full of some great tasks. I’ll be sharing some photos and inspiration along the way.
The first challenge: go meatless! This wasn’t too difficult for me since I already don’t eat meat, but I used it as a challenge to find some new meatless recipes.
For breakfast, I made this baked pumpkin oatmeal. This was so delicious. It was just the right amount of sweet for the morning and kept me full until lunch.
I packed myself a colorful salad for lunch – mixed greens, red beets, creamy orange butternut squash, cherry tomatoes, white mushrooms, green apple, and more green with avocado.
I was planning on making shrimp pad thai for dinner, but I didn’t know if fish counted as meat. Instead, I went with tofu pad thai (recipe below).

Today’s challenge was to send a card or handwritten note to a friend. I left a nice little note for my boyfriend this morning and sent a cute digital card to one of my best friends out in Chicago using the Red Stamp app. I also tweeted out this guy as inspiration to my fellow elves:

Wednesday – Try a new workout. (any suggestions?)
Thursday – Get up 15 minutes early to meditate and reflect.
Friday – Eat as many colors as possible.
Weekend – Clean out your closet and donate the contents!
