Yesterday’s Elf for Health challenge was to go meatless. While I tend to go meatless a majority of the days (having fish now and then), I decided to make it fun by trying some new restaurants and recipes.
I started off my morning with a really delicious breakfast from a local cafe: boiled egg with tomato and smashed avocado on top of ciabatta bread. It was topped gomasio, which I had never heard of before. It’s a simple condiment made of sesame seeds and salt, and it was delicious! I might have to get some for my spice cabinet. What made it even better was that I got to relax with a cup of tea and a good book. I’m reading Let’s Pretend This Never Happened by Jenny Lawson. I have to say, it’s one of the best books I’ve read in a long time! It has me constantly laughing out loud. If you’re looking for a good read, definitely pick this one up.
I made a healthy meatless salad for lunch (kale, tomato, chickpeas, avocado, and pumpkin seeds), and had some greek yogurt with raisins, almonds, and peanut butter mixed in for an afternoon snack.
For dinner, I made this delicious vegan penne a la vodka from Ethical Ocean. YUM!! I used rotini instead of penne because I had an unopened box in the pantry, but I like the swirls :).
