The past few days have been filled with great eats, so I’m hopping on the “What I Ate Wednesday” train! I tried a few new restaurants and a few new recipes, all of which are included in this post! Woohoo for Wednesday! If all goes well, I might just make this a weekly thing.
This past week was Passover, so needless to say, I consumed a lot of matzo. I of course had the classic pb+j on matzoh, but I also tried to get a little fancy.
Left: Matzo Pizza! (top one piece matzo with pasta sauce and a small handful shredded mozzarella cheese – bake in the oven at 375 degrees for 10 minutes or until cheese is melted and bubbly).
Right: Matzo Egg Sandy (whip up an omelet with veggies and cheese, spread some margarine on the matzo, top with the omelet, and top the omelet with avocado slices!)

I had a lot of delicious greens this week!

Top left – Frozen orange & blue cocktails in honor of Syracuse (Final Four, baby!)
- Orange drink – (champaign, simple syrup, peach liquor, and frozen peaches)
- Blue drink – (light rum, blue curacao, orange juice, pineapple juice, ice)
Top right – No Bake Chocolate Macaroons (recipe from Oh She Glows) – these are really easy to whip up and only use one bowl to make!
Bottom left – Vegan ice cream sundae from Lula’s Sweet Apothecary! (peanut butter ice cream, hot fudge, whipped cream, and a cherry on top!)
Bottom middle – Vanilla Strawberry Peanut Butter Protein Smoothie (one scoop Vanilla Bean Plant Fusion Protein, 5 large frozen strawberries, 1 tbsp peanut butter, and 10 oz almond milk)
Bottom right – Apple Cinnamon Smoothie (1 granny smith apple, 2 handfuls kale, 2 medjool dates, 1 tsp cinnamon, 1 tbsp chia seeds, 1 cup water)
