Protein. It’s a key component of our diet and one I’ve been trying to get more of. I’ve been upping my protein intake since starting p90x and trying to come up with creative ways to get more protein into my mostly vegetarian diet. I’ve gotten it into my morning smoothies, and my salads, but I’ve resorted to buying protein bars rather than make my own.
I’m on my last week of a high-protein diet before switching to more of a carb focus for marathon training, so I decided to end with a bang and make my own protein bars. Rather than experiment with making my own, I thought it would be best to follow someone else’s tried and true recipe. After searching pinterest and blogs, I dove back into one of my Fit, Focused, and Fun Finds posts and decided on No Bake Peanut Butter Protein Bars from Blonde Ponytail.
Let me start by saying these are amazing! Kudos to Jess for creating this recipe. They are delicious, nutritious, and boyfriend approved. I’ve been enjoying these as an afternoon snack and even for dessert post dinner (they taste like peanut butter cookies!).
The recipe makes a whole tray. I cut mine into 24 pieces. They are nice and rich so 1/24th (the amount shown in all the pictures) is really all you need. Plus, though packed with protein, these aren’t particularly low cal, so be wary of eating a big old hunk (though you may want to!). 1/24th of the recipe = 218 calories, 21 g carbs, 13 g protein.
Peanut butter and protein. What could possibly make these bars better? For one, they’re vegetarian (with an easy vegan option if you use agave instead of honey), and better yet, they’re no bake! Oh yea! It may be September, but it’s still too hot to turn on my oven. These came together really quickly and the only heat necessary was 90 seconds in the microwave.
