Today marks exactly one year since I became a vegetarian/pescetarian! I cut out meat one year ago as a challenge to myself. I have a number of friends who are vegetarian/vegan and it always intrigued me, so I wanted to see if I could do it and how I liked it. I was only going to do it for a month, but after that month I wanted to keep going. I wasn’t missing red meat or poultry at all, and, more importantly, I felt great. Who needs meat when you can eat all of this delicious stuff:
Over the past year, I’ve learned how to cook for myself without relying on meat. I’ve learned new tricks, recipes, and how to compensate for the protein my body wasn’t getting from meat. I am very fortunate to live in an area of the country that makes it easy to follow a vegetarian lifestyle. My local grocery carries tofu and other meat alternatives, there are farmers markets all over the city for amazingly fresh produce, and there are dozens of vegetarian and vegan restaurants in my area.
While I don’t see myself ever cutting out fish or going full-on vegan, I can’t see myself going back to meat and poultry any time soon.
