These soft, chewy, paleo pumpkin spice cookies make the perfect healthy snack or sweet treat no matter the season.
Monday gets a lot of flack. It’s the start of the work week, so a lot of people dread it. Poor, Monday. It comes right after the weekend, yet it’s so far from Cool Kid Friday. It just wants to be an exciting day.
Well, I love Mondays. I spend the weekend testing out new recipes, and Mondays are the days I get to share my creations with you. No more Mundane Mondays, I say! Here’s to Mouthwatering Mondays and these Paleo Pumpkin Spice Cookies!
A few years ago, Will hopped on the Paleo train. I took it upon myself to find fun new Paleo recipes that he’d like. He specifically asked for cookies. I debated over what type of cookie to make him. He loves a good sugar cookie, but since sugar doesn’t seem all that paleo, I decided to go for one of my favorite flavors: pumpkin!
I love the texture of these moist (yup – moist – sorry for those of you that hate the word – moist – whoops, said it again!) cookies. They’re soft, chewy and simply delicious. They also have the perfect amount of sweetness. Add the fact that they’re paleo, which means they’re gluten and dairy free, and you’ve got yourself a winning cookie.
Start by combining all the dry ingredients in a medium bowl: almond and coconut flours, baking soda, pumpkin pie spice (is there anything better than pumpkin pie spice?) and a little salt.
Then mix all the wet ingredients in a stand mixer. Slowly add in the dry ingredients and voila! You’ve got yourself some paleo pumpkin spice cookie dough.
When your dough is ready, it’s time to get your roll on. This recipe makes about a dozen cookies. Roll ’em up, flatten them slightly, place them on a parchment-paper lined baking sheet and pop those babies in the oven for about 18 minutes.
Before long, your house will smell amazing, your cookies will be ready, and you’ll have a happy paleo-dieter.
Now for the question I know you all are asking yourself: are these cookies actually good or are they just “paleo good?” Well, Will’s paleo experiment was four years ago. He no longer sticks to a strict paleo diet, but he still asks me to make these cookies from time to time. Soooo I’m going with actually good!

Ingredients
- 2 1/2 c almond flour
- 2 Tbsp coconut flour
- 3 tsp pumpkin pie spice
- 1/2 tsp baking soda
- dash of salt
- 1/3 c pure maple syrup
- 1/2 c pumpkin puree
- 1 egg (flax egg for vegan)
- 1 tsp vanilla
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Combine all dry ingredients in a medium bowl and mix together.
- In the bowl of stand mixer, combine the maple syrup, pumpkin puree, egg, and vanilla. Beat until smooth.
- While the mixer is still running, slowly add in the dry ingredients. Mix until well combined.
- Scoop out a golf ball sized amount, roll into a ball, press down gently to slightly flatten, and place on cookie sheet. Repeat for remaining dough (should make about 12-15 cookies).
- Bake for 18 minutes.

oh hmmm… yes maybe just more coconut flour? that might give it too much of a coconut flavor. There’s debate as to whether or not tapioca flour is paleo. Maybe that would work, though!
