Protein is an important factor in any diet, but it can be tough to get into a vegetarian diet. I usually have protein shakes or mix protein powder into a smoothie, but I also love protein bars like this one (they’re vegan!).
Unfortunately some of my favorite protein bars are extremely overpriced (some more than $3 a bar!). So I finally decided to try to make my own. They don’t look nearly as pretty as the professional, packaged bars, but they are delicious, low in calorie, and high in protein!
One square is only 100 calories and has about 8.7 grams of protein! Not too shabby. They’re nice and big, too! You can eat them like brownies or have a snack like I had yesterday: crumble one up and add it to some yogurt and sliced strawberries. Yum!
Let them cool off before cutting them into squares and store them in the refrigerator individually wrapped (I use Ziploc bags). And enjoy an extra protein boost!
** To make them vegan-friendly, combine 1 tablespoon of milled flax seed with 3 tablespoons of water. Mix it well and let it sit for 1-2 minutes. This will make one egg, or TWO egg whites.**
