Wednesday’s are my oatmeal days. Do to Yom Kippur, I had to skip the oats today, but I made pumpkin pie oatmeal over the weekend and it was quite scrumptious. This breakfast was great way to wake up in the morning and a snap to make.
One of the reason’s I love oatmeal is the possibilities are endless. You can mold the oats into any flavor you desire, and of course this week, that flavor is pumpkin. I had to do a lot of taste testing to get all the spices just right, but it came out tasting like pumpkin paradise. A bowl of this pairs perfectly with a cup of coffee and a good book.
I topped mine with some almonds, but I imagine these would also be great topped with walnuts, graham cracker bits, or even some roasted apples!
Speaking of my love of oats, I just heard about an oatmeal bar that opened up in Greenwich Village called (surprise) OatMeals. It’s like all those yogurt bars (Red Mango, Pinkberry, etc) but for oatmeal! You get an oatmeal base (made with water or any type of milk) and then can top it with anything. They have sweet concoctions like the Tropical Sunrise (pineapple, mango, coconut) or savory toppings like the Sundried Tomato & Parmesan. They even have Pumpkin Pie and Bacon Pumpkin creations! I must try this place out soon. Who’s with me?
