It’s day four of Pumpkin Perfection, and the end of the week is all about desserts (healthy desserts of course!).
I saw this recipe for No-Bake Pumpkin Cookies on Chocolate-Covered Katie’s blog a few weeks ago, and thought it would be great to test out during my pumpkin spree. I’ve never made a no-bake cookie before, so I was intrigued.
These cookies were certainly a cinch to make. You pretty much just combine all the ingredients and roll the mixture into balls. They probably took about 10 minutes start to finish. However, I was a little disappointed by the taste. I was hoping they would be sweet and pumpkiny, but the flavor I tasted the most was the oats.
On a scale of 1-10, I would give these a 7. They taste healthy, but they didn’t satisfy my sweet tooth like these bad boys. If I were to make them again, I would add a little more vanilla, a little more pumpkin pie spice, and definitely some more sweetener.
