The past week has been a whirlwind. Apologies for the lack of posts, but to make up for it, every day this week I’ll be posting a new pumpkin recipe! I challenge you to find a flavor that beats pumpkin on a crisp fall day. Not possible.
I’ve been going pumpkin crazy lately, so I’m excited to share some of my experiments. Before I get into the recipes, I have to talk about the very first pumpkin-flavored item I had this season. Sam Adams Harvest Pumpkin Ale. Have you every tried it? If not, go get some. Right now. It’s so good. I’m usually a super slow drinker, especially when it comes to beer, but I just wanted to gulp all this down. Yummmmm.
It really got me in the mood for pumpkin, so I went out and bought tons of pumpkin puree. The first item on my pumpkin list? Pumpkin butter!
My family use to get a jar of pumpkin and/or apple butter every year from some orchard or another. I didn’t get any last year and really missed it, so when I stumbled across a recipe, I was inspired to make a stash. I was really surprised at how easy it was to make. You just dump all the ingredients in a pot and let it simmer into magic (recipe below).
So now I have a jar and a half of pumpkin butter. What do I do with it all? It’s always good on toast, but I’m not a huge toast person. Sooooo I’ve made all my breakfasts pumpkin butter-infused! Smoothies, oats, pumpkin butter on toast, I mixed it with some plain yogurt and granola – the possibilities are endless. Stay tuned this week for some of those recipes and more.
