The air is getting crisper, the apples are ready for picking, and my taste buds are ready for an overload of my favorite fall food: squash! I love all kinds of squash – from pumpkin to mega spaghetti squash gourds.
Last week, I was planning on making a pasta dish with yellow zucchini squash. I asked my boyfriend to do the shopping while I went for an 11 mile run. Instead of small yellow squash, he brought home some pretty hefty acorn squash! Silly boy. I ended up making this pasta dish instead (which was delicious) and made it a goal to try a new recipe with the acorn squash he bought.
Acorn squash is slightly sweet, so a lot of times it is baked with orange juice or a little brown sugar. That didn’t seem right for a dinner dish, so I went a more savory route.
This dish took a few pots and pans, but even so, it’s really simple. Sauté a few veggies.
Add and hint of delicious fall apples and spices.
Top with cheese, stuff it all into some acorn squash, and you have yourself one fine and filling meal!
I had some filling left over after I stuffed my 4 squash halves. I topped it with avocado and ate it for lunch one day – still delicious!
