First, let me start this post by welcoming a new member to the Fitful Focus Family: the KitchenAid 12-Cup Food Processor!
I’ve been dying for one of these and got one for Hanukkah. Yey! It’s the perfect addition to my new kitchen. Here it is with all its new friends.
Wednesday’s Elf4Health Challenge was to bake healthy cookies. I’ve had my eye on a healthy brownie recipe, so I decided to make those instead. The recipe requires a food processor, but lucky me, I have one! Peanut Butter Swirl Brownies, you are no match for me! But I will say, you taste delicious!
What makes them healthy you ask?
1) They are sugar free (with the exception of the optional chocolate chips on top).
2) There is very little flour.
3) The super secret ingredient adds protein and fiber to this amazing dessert.
So you’ve seen the brownies. They look delicious. You’re dying to make them. But you need to know the secret ingredient. Ok, ok I’ll tell you. Get ready…
wait for it…
That’s right. Black beans. There are two full cans of black beans in this recipes. That’s tons of fiber, protein, antioxidants, and more amazingly healthful things. I know, it sounds gross. I was VERY wary that this recipe would actually turn out tasty, but as soon as I took a little lick of batter, I was a believer. Even my boyfriend enjoyed them.
Check out the recipe here, whip out your food processor, and give them a try. You won’t regret it! Just try not to eat the whole batch in one sitting.
