I’ve been going smoothie crazy lately. It’s starting to hit me that we only have a few warm days left, so I’m trying to get in as many of these delicious cold concoctions before switching to warmer options like pumpkin oatmeal (YUM!). I’m also trying to get in all the perfect berries that are just barely still in season.
Last week, I had a fruit smoothie almost every day for breakfast, tested out a new veggie one for dinner one night, and tried a new healthy mint-chocolate smoothie for dessert. Needless to say, my blender got quiet a workout.
My breakfast smoothies are usually pretty simple. I’ve shared this amazing one with you. I think that one is still one of my favs, but I’ve also branched out to classic strawberry-banana smoothies, coffee-banana smoothies, and made one up using my dairy-free cookies & cream protein powder:
This one has a bit of a thicker consistency than a regular smoothie because of the protein powder. It’s almost like a pudding – a delicious, super-filling, breakfast pudding. Check out the recipe below.
One hot night last week, I whipped up this veggie packed smoothie. I got this recipe from my Nike Training Club app (if you don’t already have that app, I highly recommend it).
Then, for dessert, I tried out this recipe from Tasty Yummies. It definitely tasted like a mint chocolate milkshake, but a healthy version. Mine didn’t turn out as pretty as Beth’s. It was more a murky green, but it still tasted minty, chocolately, and yummy – and only 180 calories! I think it may have been a little better had I used vanilla almond milk like Beth suggests (I used plain almond milk), but I definitely think I’d make it again. You can’t even taste the spinach.
I have a very busy week coming up with NFL kickoff (Go Cowboys!) and Fashions Night Out, but I’ll definitely have some good workouts and a healthy dessert recipe coming your way.
