St. Patrick’s Day is coming up this weekend, and I have a nice green sweater all ready for wearing. It’s easy for this day to be an unhealthy one; a lot of people use it an excuse to drink a little too much alcohol (Irish coffee, anyone?), eat green bagels, green donuts, and shamrock shakes galore. But if you’re trying to stay healthy, I put together a list of fun, green, St. Patty’s Day-worthy vegetarian (and some vegan) recipes from around the web. I haven’t tried them all, so let me know if you do!

Green Apple Ginger Smoothie from Young and Raw
1 apple, cored
1 handful spinach
1 rib of celery
1 tbsp chia seeds
1 inch pice of ginger
1 cup of water or coconut water
Combine all ingredients in a blender and blend until smooth.
