I can’t believe the Super Bowl has come and gone. The game was great, the commercials were funny, and the food was even better! Below is a roundup of all the treats that were made and consumed last Sunday:
Sweet Potato Hummus. I based my recipe off of this one. I tweaked the seasonings a bit. This was the perfect combo of mashed sweet potatoes and hummus. I served it with some veggies to have a healthy option, but it’s also delicious with tortilla chips or Wheat Thins. This was the first hummus I ever made, and I have to say, it came out pretty good! The recipe yields a huge amount, so lucky for me, there are leftovers!
I also made a Chili. Unfortunately, in the craziness that was our Super Bowl party, I forgot to snag a picture. I did capture the ingredients. There are a million, which makes this recipe seem daunting, but chili is a piece of cake. You pretty much just throw everything into a pot and let the flavors blend together. That recipe (and picture, I promise) will be up soon.
For dessert, I made a recipe I’ve been dying to try FOREVER: Chocolate Covered Katie’s Healthy Cookie Dough Dip. Holy mackerel was this stuff amazing. So amazing, that I actually just wrote “holy mackerel.” Seriously. Make this. I served it with graham crackers, but I think pretzels, Nilla wafers, or even just spoon would suffice. It is going to take all of my willpower not to eat the leftovers in one sitting, but even if I do, it’s healthy, so I won’t feel that bad!
On top of everything I made, so many of our guests brought food. We ended up with pulled pork, pulled chicken, sweet meatballs, guacamole, mac & cheese, deviled eggs, buffalo chicken puffs, chocolate chip cookies, a whipped peanut butter cake, and I’m sure I’m still missing some things. It was a feast indeed.
