Coffee is the best way to start the morning. Truth. No arguments.
I’m usually all about a nice cup (or three) of hot coffee – black like a marathoners toe nails. Mmmmm mmmm.
That said, when Mother Nature decides to grace you with 100 degree weather, hot coffee doesn’t seem all that appealing. Fortunately, there are coffee smoothies and this magical creation called iced coffee, and that’s what I’m hear to talk to you about today.
When I say magical iced coffee, I don’t just mean chilled coffee. I mean iced coffee with a special little iced coffee hack and a supercharged boost from one of my new favorite ingredients: Now Foods Chocolate Mocha MCT Oil.
Coffee + Ice + MCT Oil = wait for it…. Iced Coffee with MCT Oil!
“So what is this special little iced coffee hack?” you ask. Well, you see my fit and focused friend, the problem I typically face with iced coffee is… the ice.
“Uhhhhh, Nicole, it’s ICED coffee, as in coffee… with ice. Ice is in the name. Stupid. Why am I even reading this blog.”
Alright, Feisty Pants, bear with me. The first sip or two of a fresh cup of iced coffee is glorious. It’s chilled. It fills my blood with some much needed caffeine. Ahhh. Refreshing. But then…. then the ice starts to melt. My coffee starts to get watered down. It tastes weak. Weak coffee has no purpose in life. None, I tell you.
That’s why when I make my own iced coffee, I brew a special cup of coffee ahead of time and pour it into ice cube trays. Coffee iced cubes > water iced cubes.
Now, my coffee stays nice and cold, but when the ice starts to melt I get more coffee instead of watered-down-weak-sauce coffee. #winning #yourewelcome
Then I add the supercharged magic: MCT oil. MCT stands for Medium Chain Triglycerides, fats that are naturally found in coconut and palm kernel oils. They’re more easily and rapidly digested than other types of fats. MCTs are readily absorbed from the GI tract and are metabolized very quickly by the liver, where they are reported to encourage the use of fat for energy rather than for storage.* Numerous studies suggest that substituting MCT Oil for other fats in a healthy diet may therefore help to support healthy weight and body composition.*

- 20 oz brewed coffee
- 1 Tbsp Chocolate Mocha MCT Oil
- Allow coffee to cool.
- Pour 1/4-1/2 of your coffee into an ice cube trays (6-8 ice cubes). Freeze overnight.
- Place the rest of your coffee in an covered jar, cup or pitcher and chill in the fridge overnight.
- In the morning, Place your coffee iced cubes in a glass, pour in your MCT oil and top with your chilled coffee. Stir.
- Enjoy the buzz.
