Recently, I’ve been on a quest to create dishes that don’t require me to turn on the oven. Plain and simple, oven + non-air-conditioned apartment = sweat all over my food (bleh!).
Dinner has proven to be the most difficult of meals to create sans oven, but I can bear a little stove top action. As long as it’s only on for a few minutes and I don’t have to watch over it constantly, I should be ok. So what can a gal quickly throw together on the stove that makes for a healthy, protein-and-fiber-packed creation?
Sweet Chipotle Quesadillas!
This is a perfect summer-time dish. Not only are these babies ridiculously tasty, but they also only require the stove to be on for about 20 minutes, only about 5 of which you have to be actually supervising. No joke, this meal takes 20 minutes from start to finish to make – piece of cake-sadilla!
The full recipe is below, but basically, you just boil up some sweet potatoes, mash ’em, add in some spices, kale, and black beans, spread that in a tortilla, top with cheese, and cook for a few minutes. Voila! You’ll be chowing down on these sweet and savory ‘dillas in the blink of an eye (well, 20 minutes worth of blinks – let’s be realistic).
100% vegetarian (**vegan if you use a vegan cheese substitute**) and one scrumptious way to get in some protein and fiber. I made a whole batch of the mixture, stashed it in the fridge, and whipped up two tortillas each night for dinner. It’s a great dish if you’re into the Sunday food prep thing like I am.
