It’s Monday! You know what that means? It’s time for Meatless Mondays from A-Z! Today is another Cooking week. Last week, all the bloggers involved created recipes using Potatoes (I made this delicious Sweet Potato Bean-Free Chili!), and this week, we each picked a new recipe (either one posted as part of last week’s MMAZ linkup or another) and cooked it! I went a little sweet potato crazy this week and cooked two new sweet potato recipes!
The first was for our Super Bowl Party! Feast your eyes on this vegan Sweet Potato Seven Layer Dip from Namely Marly. Mine ended up being 5 layers because I didn’t add all the toppings, but boy oh boy is this delish. It was a huge hit at the party.
I took a few pictures of my Seven (and by seven I mean five) Layer Dip, but they don’t look nearly as pretty as Namely Marly’s. I wanted to do the dish justice, so her picture is featured here.
I also made a huge pot of Roasted Garlic Sweet Potato from Taste of Home to have on the side of some Portobello Mushroom pizzas for dinner this week. I did swap out the chicken broth for no-chicken broth to make it vegetarian, but otherwise, I stuck to the recipe. I can’t wait for Monday so I can enjoy this!
