I’ve been in an Italian mood lately. I just love the tomato, basil, and oregano flavors that typically accompany Italian dishes. To hit the mood, I tried two new Italian recipes. One is a pretty healthy dish, the other is definitely a bit of an indulgence. I’ll show you the healthy one first, before tempting you with its sneaky counterpart.
Our healthy friend is a Tomato Eggplant Tart. I found this recipe on Sunday Morning Banana Pancakes. This recipe tastes light and fresh, but is still super hearty due to the crust and meaty eggplant. I used a store bought crust due to time restraints, and you can really use any type of tomatoes. You can also leave out the olive oil if you want to be extra healthy. I also suggest really letting the paper towels absorb the moisture from the eggplant. I didn’t allot enough time for the eggplant moisture to absorb and found the bottom of my tart a bit watery because of it – but still delicious! This made for a good week of dinners and some lunches at work. Plus, 1/6th of the tart is just under 200 calories (if you include 1 tablespoon of olive oil).

Making your own pizza is definitely WAY better than ordering a greased up pie, and while all the veggies in this pie are great, the carb load is probably not so great – but sometimes you just have to say, what the heck! So…
What the heck! Lasagna Pizza here I come.
I stuck to the recipe pretty closely. I even went all out and made the crust, which was to die for! I subbed in a sugar substitute to make it a little healthier, but this is all you need for the crust:

I don’t have pizza very often, but I’m pretty sure this is the best pizza I’ve ever had. I mean, it’s pizza; it’s lasagna. How could you really go wrong? Next time you’re craving pizza – next time you’re craving anything really – make this!
This recipe makes 8 HUGE portions. Even more smaller portions of course, but when it comes to lasagna pizza, do you really want a small piece?
