This 3 ingredient Unicorn Chex Mix is bursting with color and magical flavor you’ll never forget. It’s the simplest dessert that’s sure to please.
Holy moly, you guys. It’s Thanksgiving this week! Can you believe it? I’ll be hosting for the first time for me, Will and my grandparents. It should be a great time.
Will and I actually already attended a friendsgiving with some people we met in our new apartment building. There were both traditional (turkey, mashed potatoes, stuffing) and non-traditional (bbq brisket, corn muffins) dishes, all of which were delicious. I decided to bring some non-traditional desserts. I didn’t have a ton of time, so I wanted to whip up something quick and easy but that was still sure to impress.
I’d just received a new jar of Salted Caramel Dollop, so I knew that had to be a part of it. I started trying to brainstorm popular party dishes, and chex mix came to mind. Hmmm… salted caramel chex mix? Perhaps. Then, as I was exploring the mega massive grocery store down here, I saw sprinkles. The light bulb went off. My genius idea? This Unicorn Chex Mix!
This stuff is seriously like crack. It’s legit addictive. It wouldn’t be a problem if it wasn’t so easy to make, but now that I know how simple it is, I could make it any time I want. That’s dangerous.
The plan was to make these with Rice Chex so that it was actually Chex Mix, but then I stumbled upon Honey Rice Puffins. I had to go with them for that little extra crunch and flavor.
All you do is melt the frosting, pour it over the puffins, let it cool and sprinkle on all the sprinkles. That’s it. I used Dollop Gourmet’s Sea Salted Caramel Frosting for extra special POW, but their vanilla frosting would probably be just as delicious. All of their frosting is healthier than most (half the sugar and allergy-friendly!).
It takes all of 3 minutes. It’s the easiest thing you could ever make.
I call it Unicorn Chex Mix because it’s rainbow colored and oh-so magical. Plus, “Unicorn” just fits it’s epic nature. I’m giving you the recipe, but it comes with a warning: only make this for a party. Otherwise, you will eat it all yourself. In one sitting.


- 1 box Honey Rice Puffins (or Chex)
- 1 cup Sea Salted Caramel Frosting (or vanilla)
- As many sprinkles in as many colors as you want!
- Melt frosting in microwave for 30 seconds to 1 minute.
- Pour cereal in a large bowl and pour the melted frosting over the cereal. Mix well.
- Allow the mixture to cool and then sprinkle on as many sprinkles as you like!*
- *Be sure to allow the mixture to cool or your sprinkles will melt and just turn into colored mush.
