Ok. I know it’s not Monday. It’s also a week past Cook Week for MMAZ. Fitful Focus Fail. I was too busy with the Nike Women’s Half Marathon in DC last weekend to make the recipe I was hoping to whip up, so I made it yesterday instead! Throughout April, a bunch of lovely bloggers showcased Meatless Monday recipes using Unbleached Flour and Vanilla.
The actual recipe is for donuts, but seeing as how I don’t have a donut pan (need to get on that), I improvised and made cupcakes instead! Who doesn’t love a good cupcake?
I’m starting to follow a more protein-heavy meal plan, so these are the perfect dessert for me! I followed Heather’s recipe with two exceptions:
- I used all-purpose flour instead of the mixture of cake and coconut flours.
- I added a little bit of milk to the frosting until it reached the consistency I wanted.
Each cupcake is only 125 calories and has 10 grams of protein! Sweet on so many levels.
