I love a good veggie burger, and since I finally have a food processor, I can make my own!
Since I’ve never made veggie burgers from scratch, I didn’t want to do my own ingredient experiment just yet. Instead, I stuck to a recipe from one of my favorite food bloggers over at Skinnytaste and made these Spicy Black Bean Burgers.
These burgers are packed with goodies loaded with protein and fiber and have quite a spicy kick! Black beans + eggs + oats + chipotle and more = yum! To save some calories, I used my favorite magic mayo (also used for this dressing) to make the Chipotle Mayo and Arnold Whole Wheat Sandwich Thins instead of hamburger buns.
Other than the bread and mayo subs, I stuck to the recipe pretty closely (I also didn’t add cilantro – not a fan of the stuff). The recipe made four HUGE patties. I froze them in Ziploc bags (rather than on wax paper) and cooked them in pan on the stove top for about 7 minutes per side.
I attempted to make healthy “mashed potatoes” out of cauliflower (see above), but those didn’t turn out so well. I’ll have to keep tweaking before sharing that recipe.
The great thing about veggie burgers is the ingredient combinations are endless, and now that I’m a seasoned veggie burger extraordinaire, I’m thinking about experimenting with some sweet potatoes as a main ingredient in my next burger.
