What is a Virtual Vegan Potluck?
Basically, a bunch of bloggers from all over the world get together (in a virtual sense) and posted their favorite vegan recipes at the exact same time. It’s all one big blog circle, meaning one blog links to the one before it and after it. You can follow course-by-course and go through each blog like a buffet line of recipes!
Even though I couldn’t contribute a recipe this season, I still had fun exploring the potluck. There were so many incredible recipes and so much creativity with beets (that was an added challenge to this year’s potluck). Below are a few that I’ll be adding to my Awesome Foods to Make list (which is really just a jumbled collection of recipes):
From the Salad category, I’m salivating over this Winter Fig Buckwheat Salad from The Cookbook Aficionado.
From the Sides category, Girl Eats Greens’ Rosemary Scalloped Sweet Potatoes. All I have to say is, “YUM!”
From Main Dishes, I can’t wait to make Vegan Gypsy’s Stuffed Shells Florentine. I mean, these just look incredible!
And what would a potluck be without dessert?! I have a ton of desserts waiting patiently on my “YUM – Desserts” Pinterest board, but I had to add these two:
