Mondays are becoming one of my favorite days here on the blog thanks to Meatless Monday A-Z! I love being challenged with new ingredients each week and testing out other bloggers’ creations, as well. Over the last few weeks, I created recipes using squash and tofu. This week is a cooking week – meaning I get to try someone else’s recipe!
I chose to cook another tofu recipe: Better With Veggies’ Walnut Crusted Tofu & Spicy Kale Salad.
This recipe is delicious, but I must warn you – it is not for the faint of taste buds. This bad boy is SPICY. Luckily, I love a good kick, so this was right up my alley.
I knew I was going to like this dish when I was whipping the marinade together. It smelled amazing! Once the marinade was ready, all I did was let the tofu sit in it for a bit, tossed the tofu with the walnuts, and let it bake. Delicious, nutritious, and packed with flavor – so flavorful, in fact, that I didn’t even make the aioli that goes along with the recipe. The tofu and kale had plenty of flavor on their own.
