Weekly Eats is here again! Did this week go by fast or what? I’ve been trying to up my protein intake lately (it’s one of my What’s Beautiful goals), so you’ll definitely see that reflected in all the yummy meals I had this week. I’m also excited to share another smoothie recipe with you all!
Sips & Smoothies
Hide The Spinach Smoothie. I posted this smoothie in last week’s edition of Weekly Eats, but this week, I’m sharing the recipe! You get all the nutrients and goodness from the spinach without the slightly bitter flavor. Instead, your taste buds take in the sweet flavors of banana, blueberry and vanilla. You’d fool any veggie hater with this smoothie. Recipe below.
Vita Coco Water. I cashed in some of my Earndit points to buy some Vita Coco Water! I got a pack of twelve 11oz bottles of the super-hydrating beverage for free! Ok, I had to pay $10 for shipping, but that’s still a great deal. I love downing one of these after a morning run.
Salads & Sandwiches
California Salad. This salad was loaded with protein and healthy fats. It had spinach, tomato, avocado, egg whites, tuna, and sliced almonds! Yummm.
A Typical Fitful Focus Salad. Spinach, mushrooms, tomatoes, beets, apples, chickpeas, and avocado with a roasted red pepper dressing.
Gourmet Peanut Butter Sandwich. My sister came to visit over the weekend and we made a lunch stop at Peanut Butter & Co! I am a mega nut butter fan, especially peanut butter, and love trying new combos. This sandwich had The Bee’s Knees Peanut Butter, walnuts, and granola on whole wheat bread.
Two Egg Omelet. I spread some avocado on top of a wheat thin, topped it with sliced tomato, and topped that with a mushroom and spinach omelet!
Spinach & Mushroom Egg Scramble. If you didn’t gather, I love mushroom and spinach with my eggs! I made this one as a scramble (2 eggs + 2 egg whites) with a side of strawberry preserve whole wheat toast.
When my boyfriend and I first moved to our neighborhood, we would try a new restaurant every Saturday night. We haven’t been able to have our date night in a while due to busy schedules, but we finally got back to it this week. We tested out Madiba, a really chill spot that serves South African cuisine. I’d never had South African before, but I can tell you that my first time definitely won’t be my last. It was AMAZING! We had some yummy cocktails, split some grilled calamari, and then I had split prawns with yellow rice. I gobbled it up!
Dinner of Week
Ratatouille! I made a whole crockpot full of Ratatouille last weekend, so I’ve been having that every night for dinner. It’s loaded with veggies like eggplant, bell peppers, zucchini, and onion. Mix that with some spices and chickpeas and you have one super filling, super healthy dish!
