Left: Homemade Salmon Nicoise Salad. This salad was so good, filling, and protein rich, I’ll definitely be passing this recipe along to you soon. Plus, the whole HUGE salad was under 300 calories!
Top Right: Kale Mix Salad. I loaded this salad up with kale, chickpeas, tofu, beets, apples, and butternut squash.
Middle Right: I got the recipe for this Portabella Steak Salad from the Virtual Vegan Potluck. Like how it looks? It tastes even better! Go vote for this salad from Barefoot Essence and my Chocolate Almond Banana Blueberry Smoothie in the beverages category and help us win!
Bottom Right: Fitful Focus Mean Green Salad. This salad is nice, simple, and refreshing with spinach, cucumber, green apple, pecans, seasoned tofu, and light balsamic vinaigrette.
Top: Guess what? This sushi is vegan! That’s right – fish free! It’s from Beyond Sushi in Chelsea Market. I had a sample of this at the Vegetarian Food Festival a few months ago, and loved it! Unfortunately, I had just had lunch when I stumbled across the shop, so I didn’t have any, but I’ll definitely be back!

Bottom Middle: Yogurt bowl with diced apple and granola. I’ve recently been trying to eat greek yogurt. It is very very low in lactose, so I’ve been taking it with two lactaid pills and it seems to be ok most days.
Bottom Right: Strawberry banana “ice cream” over a triple chocolate Vitatop with crumbled graham cracker.

Top right: Chocolate Mint Builder’s Bar. I love having these as an on-the-go protein-rich snack. Plus, they’re vegan-freindly!
Middle right: I tried a new coconut water from a free yoga class I went to last week. Yum!
Bottom right: Cacoa Latte from One Lucky Duck in Chelsea Market. Cashew milk, banana, vanilla, and cacao – aka YUM!
