Originally, this edition of Weekly Eats (formerly WIAW) was going to be pretty repetitive due to the Green Smoothie Detox I was doing. Since I ended the detox early, however, I spruced things up over the weekend and over the past few days. Check it out.
It would be a week of eats without Smoothies:
Top left: Tropical Colada Smoothie – pineapple + orange + coconut = yum!
Top right: Green Julius Smoothie (my fav from the challenge)
Bottom left: Blueberry Vanilla – I love my blueberries
Bottom middle: Razzleberry Lemonade – tastes just like sounds, so refreshing
Bottom right: Traditional Green – a classic

Soups + Salads:
Veggie Power Salad – this was my salad during the detox (green leaf lettuce, broccoli, beets, chickpeas, snow peas, red bell pepper, tomatoes, and vegan ranch dressing).
Fitful Focus Mix Up Salad – I can finally have avocado again! (green leaf lettuce, beets, baby bella mushrooms, chickpeas, tomatoes, granny smith apples, avocado)
Once I decided to end my detox early, I went out and got this delicious vegan pizza from Lean Crust.
I cooked up this omelet for lunch over the weekend (complete with spinach, lactose-free cheddar cheese, and tomatoes).
And made this deliciously-scrumptious-totally-vegan tofu marsala with spaghetti squash for dinner. This is so yummy. I don’t want your taste buds to miss out, so I provided my version of the recipe below. The original recipe can be found over at Fork You. No, Fork You!
