Happy hump-day! Lots of great eats to share with you today.
I have a smoothie almost every day for breakfast. I like to switch it up, so I don’t get sick of having the same flavor. These were two rock stars from the past week:
Mango Teini Smoothie (1 cup frozen mango, 1 frozen banana, 1 ¼ cup almond milk, 1 scoop Vanilla Bean Plant Fusion protein powder)
PBBBP Smoothie (1/2 tbsp peanut butter, 1 frozen banana, ½ cup frozen blueberries, 1 scoop Vanilla Bean Plant Fusion protein powder, 1 ¼ cup almond milk)
Salads and Sushi
I filled up on delicious veggies and protein for lunch.
Left: Seared Tuna Nicoise Salad from Jane (mixed greens, olives, hard cooked egg, caper, Dijon potato, roasted pepper)
Top Right: Sake Miso Salmon and Vegetable Roll from Nagomi
Bottom Right: A Fitful Focus Salad (baby spinach, cherry tomatoes, white mushroom, beets, chickpeas, avocado, broccoli, and Trader Joe’s dressing)
I love the Yonanas machine I got as a birthday gift. I’ve been testing out new combos, and no matter what I do it’s delicious!
PB&J Yonanas (1 ½ frozen bananas, 3-4 frozen strawberries, stir in peanut butter)
Thin Mint Yonanas (1 ½ frozen bananas, 2 thin mint cookies, stir, then add an extra cookie on top for prettiness – and for eating!)
I’ve been eating some homemade fish tacos for the past few nights. I just seasoned some Atlantic Cod from Trader Joes with cajun spice, warmed up 2 corn tortillas, and added fresh tomato and avocado. Delicious and nutritious!
